Ingredients

  • 1 cup butter
  • 1 1/2 cups sugar (300 grams)
  • 2 large eggs
  • 2 3/4 cups flour (345 grams)
  • 2 tsp cream of tartar (6 grams)
  • 1 tsp baking soda (5 grams)
  • 1/4 tsp salt
  • 3 Tbsp sugar (for rolling) (38 grams)
  • 3 tsp cinnamon (for rolling) (8 grams)

Method

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Combine dry ingredients with a sifter.
  4. Blend dry ingredients with the wet mixture.
  5. Chill dough for 10-15 minutes.
  6. Mix sugar and cinnamon together. Roll one-inch dough pieces in it.
  7. Place on a baking sheet.
  8. Bake for 10 minutes at 350°F.
  9. Remove from pan immediately.
