Ingredients
- **Cookie Dough:**
- 3/4 cup unsalted butter (softened)
- 1/2 cup light brown sugar
- 1/2 cup sugar
- 4 Tbsp molasses
- 1 egg
- 2 tsp vanilla extract
- 2 1/4 cup flour
- 1 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- **Cinnamon Sugar Mix:**
- 1/2 cup sugar
- 4 tsp ground cinnamon
Method
- Cream together with stand mixer or hand mixer butter and sugar. Mix for about 2 minutes until fluffy and smooth.
- Add in egg, vanilla, and molasses and mix until combined. Add in dry ingredients (flour, baking soda, spices, and salt) and mix until combined and a soft dough is formed.
- Form into 9 (3 ounce) dough balls. Roll each ball into cinnamon sugar mixture until fully coated and place onto parchment paper lined cookie sheet.
- Bake at 350 for 14 minutes, let cool on tray for 10 minutes before serving!
