Ingredients

  • 1 cup long-grain brown rice
  • 3 BLS (boneless, skinless) chicken breasts
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg broccoli florets
  • 1/2 cup chopped onion
  • 1 3/4 cups chicken broth
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • Salt & Pepper (S & P)

Method

  1. Preheat oven to 400. Cook rice according to package directions.
  2. Drizzle chicken with oil in a slightly greased baking dish. Bake 25 minutes or until done. Cool and shred chicken.
  3. Meanwhile, microwave broccoli according to package directions.
  4. Stir together rice, broccoli, chicken, onion, broth, sour cream, 1 cup cheese, salt & pepper. Spoon into a lightly greased 13x9 inch baking dish; sprinkle with remaining cheese.
  5. Bake 20 minutes or until bubbly.
