Ingredients
- **Pudding:**
- 5 eggs, beaten
- 1 2/3 cups whipping cream
- 1 2/3 cups milk
- 1 1/4 cups sugar (250 grams)

- 1 1/3 teaspoons vanilla
- 6-8 cups stale bread cubes (white bread is best)
- 1/2 to 1 teaspoon cinnamon
- **Brown Sugar Sauce:**
- 1 cup packed brown sugar (200 grams)
- 1/2 cup butter
- 1/3 cup boiling water
- 1 teaspoon vanilla
- **Lemon Sauce:**
- 1/2 cup sugar (100 grams)
- 1 tablespoon cornstarch (8 grams)
- 1/4 teaspoon salt
- 1 cup boiling water
- 2 tablespoons butter
- 1 tablespoon lemon rind, grated
- 1/4 cup lemon juice
- 1/4 teaspoon lemon extract
Method
- Preheat oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, combine the eggs, whipping cream, milk, sugar, salt, and vanilla. Mix well.
- Add the bread cubes to the mixture, ensuring they are well soaked. Let sit for about 10-15 minutes so the bread absorbs the liquid. If using, add cinnamon.
- Pour the mixture into the greased 9x9 inch pan. Bake for about 30 minutes or until the pudding is set and golden on top.

- Serve the bread pudding warm with either or both sauces drizzled over the top.
