  • 1 cup packed brown sugar (200 grams)
  • 1/2 cup butter
  • 1/3 cup boiling water
  • 1 teaspoon vanilla
  • **Lemon Sauce:**
  • 1/2 cup sugar (100 grams)
  • 1 tablespoon cornstarch (8 grams)
  • 1/4 teaspoon salt
  • 1 cup boiling water
  • 2 tablespoons butter
  • 1 tablespoon lemon rind, grated
  • 1/4 cup lemon juice
  • 1/4 teaspoon lemon extract

Method

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine the eggs, whipping cream, milk, sugar, salt, and vanilla. Mix well.
  3. Add the bread cubes to the mixture, ensuring they are well soaked. Let sit for about 10-15 minutes so the bread absorbs the liquid. If using, add cinnamon.
  4. Pour the mixture into the greased 9x9 inch pan. Bake for about 30 minutes or until the pudding is set and golden on top.
