Ingredients
- 1 cup long-grain brown rice
- 3 BLS (boneless, skinless) chicken breasts
- 1 Tbsp olive oil
- 1 (12-oz) pkg broccoli florets
- 1/2 cup chopped onion
- 1 3/4 cups chicken broth
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- Salt & Pepper (S & P)
Method
- Preheat oven to 400. Cook rice according to package directions.
- Drizzle chicken with oil in a slightly greased baking dish. Bake 25 minutes or until done. Cool and shred chicken.
- Meanwhile, microwave broccoli according to package directions.
- Stir together rice, broccoli, chicken, onion, broth, sour cream, 1 cup cheese, salt & pepper. Spoon into a lightly greased 13x9 inch baking dish; sprinkle with remaining cheese.
- Bake 20 minutes or until bubbly.
