Ingredients
- 1 1/2 cups flour (187.5 grams)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup mashed bananas
- 3/4 cup white sugar (150 grams)
- 1 egg
- 1/3 cup butter, melted (or applesauce)
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
Method
- Preheat oven to 350°F. Sift together flour, baking powder, baking soda, and salt. Set aside.
- Combine bananas, sugar, egg, and butter in a large bowl. Fold in flour mixture and mix until smooth. Scoop into muffin pans.
- Bake 10-15 minutes for mini muffins, 25-30 minutes for regular.
